Country Skillet Breakfast

Instructions:

Melt butter in large skillet. Add sausage and break up with a spoon to crumble. Continue cooking until no longer pink. Add potatoes, sausage, garlic, onions and peppers. Cook until potatoes are lightly browned on all sides. Season with salt and pepper. Pour eggs over potato mixture. Do not stir. Cover and cook over medium-low heat until eggs are set, about 6 minutes. Remove pan from heat. Sprinkle cheddar over potatoes and cover until cheese is melted, about 3 minutes. Serve immediately.

2 cups frozen diced potatoes
1 cup (4 oz.) bulk breakfast sausage
2 tsp. minced garlic
1 cup diced onion
1 cup diced green pepper
1½ tsp. salt
½ tsp. black pepper
6 eggs, lightly beaten
1 cup (4 oz.) Tillamook® Sharp Cheddar Cheese, shredded
