I bring my lunch to work almost every day. As I easily tire of the same items in my lunchbox, I am always looking for inspiration and ways to try new items. Here’s a vegetarian sandwich that’s inspiring and delicious!

Avocado & Cheese Sandwich

One sandwich

1 hoagie roll
1 slice of Tillamook Provolone Cheese
1 slice of Tillamook Swiss Cheese
1 handful of spinach
2 medium slices of tomato
¼ of an avocado, thinly sliced
1 oz of pickled peppers (such as Mama Lil’s Peppers)
Italian dressing, to your hearts desire

Cut your hoagie roll almost all the way in half, but leave a small sliver of bread still attached at the edge so it mimics a clam shell. This will help when eating the sandwich so all the ingredients don’t get pushed out when you bite down! Cut the slice of Provolone and the slice of Swiss cheese in half and evenly layer the cheese on the hoagie. In this order, add the handful of spinach, tomato slices, avocado, and pickled peppers on top of the cheese. Dress the sandwich with Italian dressing until it has reached your preferred taste. If packing this for lunch, you may want to put the dressing on the side and incorporate into the sandwich right before eating. Enjoy!
