Cinco de Mayo has long been one of my favorite food holidays. What could be better than a day full of nachos, burritos and margaritas? In my opinion it’s the perfect opportunity to pick up some of my favorite Tillamook products like Natural Sour Cream, Pepper Jack Cheese, and Sharp Cheddar Cheese, and go to town in the kitchen whipping up a Mexican feast for my friends and family to enjoy. Break out your sombrero and crack open a jar of salsa because it’s time for a fiesta!

Every great fiesta starts with a heaping bowl of guacamole and some salty tortilla chips to scoop it up. I love this version from Unnati at Spice & Wine blog. It’s creamy and slightly tangy from the added Greek Yogurt. It’s so delicious we recommend making a double batch; you’ll want to slather it on all of your on all of your food!

While I’ve never been one to turn down a burrito, but I’m usually much more inclined to grill up a cheesy quesadilla instead. Probably because you can stuff it full of Tillamook Shredded Mexican 4 Cheese Blend and no one can judge because “cheese” is right there in the Quesadilla title! This recipe for Dipping Quesadilla is one of my faves because the only thing that can improve this cheese-tastic dish is a bowl of hot cheese dipping sauce!

If you’re more of a meat eater then you may prefer this recipe for Carne Asada Tacos. These tacos have just enough spice to warrant a big dollop of Tillamook Natural Sour Cream or Tillamook Plain and Simple Farmstyle Greek Yogurt.

Cinco De mayo is also a great time to spice up some of your favorite every day recipes. Like this Mexican Grilled Cheese sandwich for example! We used Spicy Pepper Jack Cheese, cilantro, and avocado to give it a Mexican spin. Make sure to serve it with a bowl of salsa on the side for dipping!
