It’s Better Breakfast Month! The possibilities for hearty, delicious breakfasts are infinite. One of my favorite breakfast and brunch foods to bake is popovers! Prep time is minimal, making these self-contained breads an easy thing to pop into the oven and grab on the go or to add to your brunch table spread.

6 popovers

 

Ingredients
3 eggs
1¼ cups half and half
1¼ cups flour
¼ teaspoon salt
3 tablespoons melted Tillamook Salted Butter
¾ cups shredded Tillamook Sharp Cheddar

Preparation
Preheat oven to 400ºF and grease a popover pan (if you don’t have access to one, you can try a muffin tin, but the results may differ).

In a large mixing bowl, beat eggs, half and half, flour and salt. Once those are combined, stir in melted butter – you can easily melt it by microwaving for 15 seconds. Fill the cups of the popover pan ½ full. Sprinkle shredded cheese in each of the cups on top of the batter. Then, pour the remaining batter on top. Bake for approximately 50 minutes. Remove from oven, let cool for 5 minutes.

 

They should pop right out of the pan. Enjoy while warm with Tillamook Butter or your favorite jam or jelly. You can also heat them in the oven or toaster to enjoy the following day if you’ve got leftovers!
