No matter which way you serve it, grilled cheese is always comforting and delicious, but for Grilled Cheese Month this year we wanted to find a new and interesting way for you to impress your grilled cheese eating guests. What did we come up with? Grilled Cheese Dippers! Sure you can slather on a layer of Pesto Aioli or Southwestern Sauce inside your sammie, but it’s way more fun to cut the sandwiches into strips and get to dippin’! These pairings are fun, exciting and will give your plain ol’ grilled cheese the flavor punch it was missing.Sharp Cheddar Grilled Cheese SandwichSharp Cheddar Cheese and Spinach Walnut Pesto Aioli

Ingredients
Tillamook Unsalted Butter
2 slices of bread
2 Tillamook Sharp Cheddar Cheese Slices
½ cup toasted walnuts
1 clove garlic
1 teaspoon salt
¼ cup Tillamook Shredded Italian 2 Cheese Blend
¼ cup extra virgin olive oil
2 cups fresh spinach
¼ cup mayo

Preparation
1. In a food processor, combine the walnuts, garlic, salt, shredded cheese and olive oil. Blend until walnuts are finely ground. Add the spinach and blend until well combined. You may need to drizzle in more olive oil at this point depending the desired consistency. Transfer to a bowl and stir in the mayo.

2. Sandwich the Sharp Cheddar Cheese Slices between two slices of buttered bread.

3. Heat a pan or griddle over medium heat. Once it is hot, add the sandwich and cook until cheese is melted, about 3 minutes on each side. To speed up the cooking process, cover your pan with a pot lid to help trap the heat and melt the cheese!

4. Once the sandwich is golden brown on both sides remove it from the pan, slice into strips and serve with pesto!

Colby Jack Grilled Cheese SandwichColby Jack Grilled Cheese with Roasted Red Pepper Romesco Dip

Ingredients
Tillamook Unsalted Butter
2 slices of bread
2 Tillamook Colby Jack Cheese Slices
½ cup toasted almonds
1 clove garlic
1 teaspoon salt
1 teaspoon black pepper
¼ cup Tillamook Shredded Italian 2 Cheese Blend
¼ cup extra virgin olive oil
2 cups roasted red peppers (drained and patted dry if from a jar)

Preparation
1.  In a food processor, combine the almonds, garlic, salt, pepper,  shredded cheese and olive oil. Blend until almonds are finely ground. Add the red peppers and blend until well combined.

2. Sandwich the Colby Jack Cheese Slices between two slices of buttered bread.

3.  Heat a pan or griddle over medium heat. Once it is hot, add the sandwich and cook until cheese is melted, about 3 minutes on each side. To speed up the cooking process, cover your pan with a pot lid to help trap the heat and melt the cheese!

4. Once the sandwich is golden brown on both sides remove it from the pan, slice into strips and serve with romesco!

Pepper Jack Grilled Cheese SandwichPepper Jack Grilled Cheese with Southwestern Dip

Ingredients
Tillamook Unsalted Butter
2 slices of bread
2 Tillamook Pepper Jack Cheese Slices
½ cup Tillamook Premium Sour Cream
2 tablespoon ranch dressing
2 tablespoon taco seasoning

Preparation
1. In a small bowl, combine sour cream, ranch dressing and taco seasoning. Using a fork blend all ingredients together until well combined.

2. Sandwich the Pepper Jack Cheese Slices between two slices of buttered bread.

3. Heat a pan or griddle over medium heat. Once it is hot, add the sandwich and cook until cheese is melted, about 3 minutes on each side. To speed up the cooking process, cover your pan with a pot lid to help trap the heat and melt the cheese!

4.  Once the sandwich is golden brown on both sides remove it from the pan, slice into strips and serve with Southwestern Dipping Sauce!
