When it comes to delicious cheese plates, fruit is the perfect companion for cheese.  To celebrate National Grilled Cheese Month, we decided to put a few fruit and cheese pairings to the true test by grilling them up between two slices of bread! This pineapple, jalapeno, lime and Tillamook Pepper Jack sandwich was definitely a hit, and for good reason. The bright and spicy flavors are the perfect cure for a rainy, spring day and have us day dreaming of warmer summer days to come!

Ingredients
Tillamook Unsalted Butter
2 slices of bread
2 Tillamook Pepper Jack Cheese Slices
¹⁄4 cup thinly sliced fresh pineapple
2 teaspoon diced jalapeno, seeds removed
Juice from ½ lime Pineapple, Jalapeno, Lime and Pepper Jack Grilled Cheese Sandwich

Instructions
1. Butter one side of each bread slice. Place one slice of bread butter side down on a plate or cutting board.

2. Layer one slice of Pepper Jack Cheese on the bread, followed by the pineapple and jalapenos. Squeeze the lime over the sandwich, top with remaining slice of pepper jack and bread.

3. Heat a pan or griddle over medium heat. Once it is hot, add the sandwich and cook until cheese is melted, about 3 minutes on each side. To speed up the cooking process, cover your pan with a pot lid to help trap the heat and melt the cheese!

4. Once the sandwich is golden brown on both sides remove it from the pan, slice and serve!
