The dog days of summer are approaching, and pretty soon it will be too darn hot to turn on that oven. But does that mean you aren’t allowed a delicious, warm, summery dessert? No way, Jose! Pull out the crock pot, cut up summer’s freshest fruits, and whip up a cobbler. Top it with a big scoop of Vanilla Bean Ice Cream and you’ve got yourself something special!
Slow Cooker Summer Dessert
Prep time: 30 minutes
Total time: 3 hours
Yield: 4 servings
3 cups fresh fruit (berries, apple, cherries… whatever’s in season!)
1¼ cup sugar
1 teaspoon vanilla
1¼ cup flour
¼ teaspoon salt
1½ teaspoon baking powder
¾ cup milk
⅓ cup Tillamook Unsalted Butter, melted
2 teaspoons cinnamon
4 scoops Tillamook Ice Cream
Grease crock put with butter or oil.
In a large bowl, mix fruit, ½ cup sugar, and vanilla. Pour fruit mixture into the slow cooker. In a separate bowl, mix together flour, ½ cup sugar, salt, baking powder, milk, and butter. Drop bits of batter onto of the fruit in the slow cooker. In a small bowl, mix the remaining ¼ cup sugar and ground cinnamon. Sprinkle the cinnamon sugar on top of the dough, then place the lid on the slow cooker.
Turn the power onto high and slow cook for 3 to 4 hours until the topping has puffed and the fruit is bubbling. Once it’s ready, serve up the cobbler and top with a scoop of Tillamook Ice Cream!
