As the school year rolls closer it’s time to brush up on lunch making skills. Whether you have a whole family to feed or you’re just vouching for yourself, here’s a vegetarian sandwich recipe that will satisfy all taste buds.

Spinach Artichoke & Cheddar Sandwich

Yield
One sandwich

Ingredients
2 slices of high-quality bread (such as Dave’s Killer Bread)
Approximately 2 oz of your favorite spinach artichoke dip
1 handful of spinach
1 large slice of tomato
2 slices of Tillamook Medium Cheddar Cheese

 

Preparation
Lay two slices of bread down on a board. Add the spinach artichoke dip to one slice of bread. Then add a handful of spinach on top of the artichoke dip so that it covers the entire width of the bread. Layer a slice of tomato on top of the spinach. Top the sandwich off with 2 slices of Medium Cheddar and the other slice of bread. Whala!
