A Slice of History: Dishes for Occasions

The archives are full of historical gems. Recipe pamphlets are one of these gems. This particular one, circa 1936-1945, the Tillamook Dairy Maid gave some wise advice about entertaining. “My favorite meal-planning secret, one special dish to surprise them! That’s a trick most good cooks learn sooner or later… in planning meals, follow your usual meal plan… but include in addition one special dish that’s different… something so good they’ll remember it…and the success of your dinner is assured.”

Here’s a dish to remember from “Dishes for Occasions”:

Fried Seafood Squares

1 can crabmeat or any seafood
1 small onion, minced
2 tablespoons pickle relish
2 tablespoons salad dressing
1 cup Tillamook Cheese, grated
1 tablespoon minced celery
pastry

Mix crabmeat with minced onion, pickle relish, salad dressing, Tillamook Cheese and celery. Roll out pastry and cut into 1-inch squares or circles. Put squares together sandwich fashion with a spoonful of the mixture between. Seal with a fork and bake or fry in deep fat. If circular cutter is used, make half moons with a dab of filling inside. Seal with a fork and bake or fry.
