Tillamook cheese is always a treat in our house, be it ice cream or cheese. We have found no better cheese for our needs than Tillamook Cheddar and we love all the special flavors (the extra sharps, the garlic flavored, the smokies…) When we visit the Oregon Coast we always make a point to visit the Tillamook Factory, take the tour, and try something we haven’t tried before. Tillamook’s the greatest!

In a large skillet place 3 cans of drained black beans. If beans are plain use a spoon of red chili sauce. Chop a small onion and add (optional). Next cut 4 large chicken breasts into 3 pieces each (you can also use tenders). Place chicken in the beans, cover and cook until chicken is cooked. Then shred about 1 1/2 cups of Tillamook Extra Sharp Cheddar on top and let melt. Serve with corn bread and enjoy =-]
