Tillamook Cheesy Brunch Frittata

 

Every Sunday my family tries to get together to enjoy a leisurely late morning breakfast. I like breakfast and brunch foods that fill the house with mouthwatering scents while cooking. Frittata is a great brunch food because it’s easy to make, looks good, and you can customize it to fit the ingredients you’ve got around the kitchen.

Prep time: 15
Total time: 30
Yield (number of servings): 4

Ingredients
8 eggs
½ yellow onion
5 mushrooms
Olive oil
2 potatoes
½ cup shredded Tillamook Medium Cheddar
Handful of grape tomatoes
Spinach, kale, or fresh basil, just enough for garnish
Fresh parsley
1 pinch of black pepper
1 pinch of salt
Note: You will need a frying pan that can be put into the oven

Preparation
Preheat oven to 350ºF. Dice onion and place in pan over heat with olive oil. Then slice mushrooms and add to the pan. Sauté onion and mushrooms until onion is transparent. Remove onion and mushroom from pan and set aside.

Beat eggs together and set aside. Arrange thin slices of potato on the bottom of the pan and cook for a few minutes over medium heat. Once cooked, arrange the potatoes to cover the bottom of the pan (this will act like a pie crust when you serve the frittata). Cover with a layer of the mushroom and onion, and then pour beaten eggs evenly over the layer of mushrooms and onions. Cover the eggs with the grated cheese. Garnish with the tomatoes, parsley, basil, salt, and pepper. Bake in oven for 15 minutes. Best if sliced and served right away.

You can make this breakfast frittata using any seasonal vegetables or diced meats you’d like. You can also substitute any tasty Tillamook Cheese for the Medium Cheddar to mix things up!

Bacon Cheddar Waffle Sandwich

Did you know it is National Better Breakfast Month? Let’s celebrate by pushing our culinary limits and trying out some new recipes. Here are a couple of my favorites to serve as inspiration.

1. Breakfast Strata
- Use whatever you have in your fridge! My strata generally has bacon, Tillamook Cheese, veggies and sautéed onions.
- Sauté the bacon and onions in a fry pan
- Add the egg mixture.
- The egg closest to the burner will cook first, so be sure to swirl and pull the cooked egg from the sides of the pan to make sure all eggs have their turn near the burner.
- When the majority of the egg is cooked (except the center of the top) put the strata in the oven at 350 degrees for about 10 minutes, or until the top is cooked.
- Turn the broiler on to get the top extra crispy!

Bacon and Cheese Omelet

Start your day off with a bacon and cheese omelet that’s easy to make and won’t leave you feeling bloated. A simple take on an old-time favorite! This delicious egg creation takes about 15 minutes to make and is sure to satisfy bacon and cheese connoisseurs.

Bacon and Cheese Omelet Ingredients

Ingredients

3 eggs
3 strips of bacon
1 cup Tillamook Medium Cheddar Cheese, shredded
¼ cup tomatoes, sliced
3 green onions, sliced

PREPARATION

Bacon
Cook the bacon over a medium high heat until it becomes crispy. Remove the bacon from the pan and cover with a paper towel to soak up any residual grease. After it has cooled, tear the bacon into bite-sized chips.

Crack 3 eggs into a bowl and whip. Add a little milk to the eggs for a fluffier omelet.

Assembly of the Omelet
Start off by heating up a fry pan over medium heat and add a tablespoon of Tillamook Butter to prevent the omelet from sticking and burning. After the butter has melted and is fully layering the bottom of the pan, poor in your egg mixture. When the eggs have cooked for a minute or two and the bottom of the egg mixture is solid, flip the omelet over to form a half circle.

The next step (yay!) is to add toppings. First, spread cheese all-over the top of the omelet, then add the bacon chips and sliced green onions. After the bacon and onions have melted into the cheese, remove the omelet from the pan and sprinkle on the tomatoes. Season to taste with some salt and pepper and voilà – a tasty meal!
