Oh Happy Day – Ice Cream Sandwich Recipe!

 

Celebrate National Ice Cream Sandwich Day with this Ice Cream Sandwich recipe made with Tillamook Ice Cream.

It’s National Ice Cream Sandwich Day, and I’ve got the perfect Tillamook Ice Cream Sandwich recipe for you! With so many Tillamook Ice Cream flavors to choose from, it’s hard to narrow down the options, but we’ll make this decision easy for you with our Chocolate and Strawberry Ice Cream Sandwiches recipe made with Tillamook Oregon Strawberry Ice Cream. The combo of homemade chocolate cookies and Tillamook Ice Cream is a match made in heaven and the perfect dessert for today!

Chocolate and Strawberry Ice Cream Sandwiches Recipe                                                                                 
                                                                                                           
Ingredients:
                                                                                               
1 cup all-purpose flour                                                                                           
½ cup unsweetened cocoa powder                                                                                               
½ teaspoon salt                                                                                            
¼ teaspoon baking soda                                                                                         
½ cup (1 stick) Tillamook Unsalted Butter, melted                                                                               
2 eggs, at room temperature                                                                                              
¾ cup sugar                                                                                      
3 tablespoons corn syrup                                                                                       
1 (1.75 quart) container Tillamook Oregon Strawberry Ice Cream                                                        

Directions:                                                                                                   

Position rack in middle of oven.  Preheat oven to 350˚ F.  Lightly butter an 11 x 17 inch jelly-roll pan and line with parchment paper.                                                                                                                      

Chocolate cookie:
In a medium bowl whisk together flour, cocoa powder, salt and baking soda until thoroughly blended. 

In a medium bowl whisk together melted butter, eggs, sugar and corn syrup until well combined, about 1 minute.  Stir in dry ingredients and mix until blended. 

Spread batter evenly into prepared pan.  Bake just until cookie springs back when lightly touched, about 9 minutes.  Cool in pan 5 minutes. 

With a small knife, loosen cookie from sides of pan and invert on a parchment lined work surface.  Carefully remove parchment from bottom of cookie and let cool completely, about 30 minutes.  Line a baking sheet with plastic wrap.  Cut cookie in half to make two 8 1/2 x 11 inch pieces.  Lay one half, top side down on the baking sheet.                                                                                                                                                                                                             

Ice cream sandwiches:
Remove ice cream lid and let container stand at room temperature to soften, 10-15 minutes, stirring occasionally to encourage even softening. 

Spoon softened ice cream on top of cookie on baking sheet.  Working quickly, using a rubber or metal spatula, spread ice cream evenly, making a layer of ice cream ½ – ¾ inch thick.  Top with remaining cookie half, top side up.  Press gently to spread ice cream to the edges.  Cover and freeze until firm, about 4 hours or overnight.                                                                                                                                                                                                             

To serve:
Remove baking sheet from freezer.  Lift bottom piece of plastic wrap to remove sandwich from pan and place on work surface.  Cut into 15 equal portions.  Serve immediately or wrap individually and store in freezer for up to one week.

Today begins National Sandwich Month, which got me thinking about my favorite childhood sandwich that my mom would pack in my school lunches: sliced cheddar cheese on wheat bread with a little mayo. That was it. No meat or veggies, just the cheese. And because I grew up in Oregon, you can bet that cheddar was Tillamook!

As the resident party planner among my group of friends, I’m always looking for interesting and fresh ideas for dinner parties. Next week I’m throwing a dinner party where every course will have a modern twist on a childhood favorite. If you know me, it’s no surprise that I’m kicking the planning off with dessert – homemade coffee ice cream milkshakes!

As a kid I loved milkshakes. I also loved coffee, but my mom wouldn’t let me have any. For dessert I’ll be making a coffee ice cream milkshake made with Tillamook Coffee Almond Fudge Ice Cream. This coffee ice cream is the perfect blend of coffee, butter-roasted almonds, and a chocolate fudge ripple. The recipe is simple — scoop the coffee ice cream in a blender with a little milk and ice, blend, and enjoy!

If you want to add a little flair, throw in a dash of your favorite adult liquor, such as Bailey’s, Kahlua, Grand Marnier or Chambord (adults only!). Vanilla extract also adds some additional flavor. Top off your coffee ice cream milkshake with an espresso bean and thick, rich, creamy fudge!

Celebrate National Hot Fudge Sundae Day with Tillamook Ice Cream!

If you need a break from the summer heat (or a good excuse to eat ice cream), have a hot fudge sundae today! It is, after all, National Hot Fudge Sundae Day and Tillamook Ice Cream provides a great avenue to help you celebrate this deliciously monumental day. As an ice cream lover, this is one of my favorite days!

To commemorate National Ice Cream Day, I’m celebrating with the best ice cream: Tillamook Cookie Dough! No wait, the best ice cream is Tillamook Grandma’s Cake Batter. Wait, no, Tillamook Chocolate Peanut Butter. Tillamook Vanilla Bean? Gaaaaaaaah! They’re all the best ice cream flavors!

I know I may be a little biased, but I really do believe that Tillamook makes the best ice cream out there, and it is impossible to choose one over the other. So, whatever your favorite Tillamook Ice Cream flavor is, grab it, scoop it, and devour it today on National Ice Cream Day. Have an extra scoop or two… it is a holiday after all!

Today is National Cow Appreciation Day!

 

Thank you, cows, for being so udderly great!

How do we love our 4-legged Holsteins, Jerseys, and Guernseys? Let us count the ways!

We love that they give us the freshest, highest quality milk for use in producing Tillamook Cheese and Tillamook Ice Cream. We love the livelihood that they provide to all the farmer-owners of our cooperative. We love how picturesque they are in the rolling meadows and hills of Tillamook county. Heck, we even love the “dairy air” they provide!

So, to all the hard-working Tillamook dairy cows, as well as their cousins nationwide: We appreciate you!

Join us at the Cheese Factory today to help celebrate cows! For the first 500 people who visit us today, we have a special beanie cow gift for you. Rumor has it that our mascot, Tillie the Cow, will also show up throughout the day to greet our visitors. And don’t forget to sample some cheese and ice cream made possible for you by your friends and ours, cows!

Time for a Strawberry Sundae!

 

Celebrate National Strawberry Sundae Day with Tillamook Ice Cream!

 

I spent last weekend picking strawberries, this week making strawberry jam, and today I plan on eating a strawberry sundae. Why? Because it’s National Strawberry Sundae Day!

Here are some ideas for putting together a seriously delicious strawberry sundae:

Strawberry Sundae - First Layer:
Angel food cake, pound cake, shortcake, or meringues

Strawberry Sundae – Second Layer:
Tillamook Oregon Strawberry Ice Cream

Strawberry Sundae – Third Layer:
Fresh strawberries!

Strawberry Sundae – Fourth Layer:
Tillamook Strawberry Cheesecake Ice Cream

Strawberry Sundae – Fifth Layer:
Strawberry jam, strawberry coulis, strawberry syrup

And to top it all off:

Cheesy 4th of July Fun

 

The Tillamook Cheese Loaf Love Tour at the Danville 4th of July Parade!

There are so many opportunities to feel like a rock star while on the Loaf Love Tour, but the 4th of July Parade in Danville, CA had to be one of our highlights! We rose nice and early armed with 12,000 Tilla-Moos and gorgeous sunny skies. As soon as we arrived, we knew we were going to have a great time.
 
Our awesome VW Yum buses were in a staging area with helicopters, little league teams, local dignitaries, and, of course, lots of cheese-loving parade-goers decked out in their most patriotic gear. Once our buses got started on the route, there were seven of us toting portable coolers full of the World’s Best Medium Cheddar Cheese for the fans along the way. People were screaming for Tillamook Cheese and it energized me for our 2.5 mile trek. As I got started, I heard from a mom how great it was to get our all natural cheese as snacks rather than candy … as if I didn’t already feel great about being here – this made it even better!

But the best moment of all was shortly after I refilled my cooler behind our Loafster convertible. The shoulder strap was tangled and I had to set it down to work it free. While I was stopped right in the middle of the parade route, both sides of the road started competing with screams of “cheese!” I cupped my hand to my ear and egged on the friendly competition. The screams went back and forth getting louder and louder.  I finally declared a winner by running over and handing out tons of Tilla-Moos. And because I’m a softie, I ran to the other side and brought them their own tasty cheese samples, too!
