Sweet Potato Fries with Cilantro Sour Cream Sauce
These sweet potato fries are perfect for your next game day tailgate or dinner party. The cool and creamy sour cream sauce with a kick of lime and pepper compliments the sweet flavor of the fries. This recipe is an easy way to impress your guests with a tasty side dish they’re sure to love!
2 large sweet potatoes
2 tablespoons olive oil
1 cup Tillamook Sour Cream
1 ½ tablespoons finely chopped cilantro
1 tablespoon lime juice
¾ tablespoon cyan pepper
¾ tablespoon chili pepper
Preheat the oven to 450ºF. Peel and slice sweet potatoes into strips and place potatoes on baking tray (try to space them so that none are touching). Brush with olive oil and sprinkle with a pinch of salt and black pepper. Bake for 20-25 minutes (or until they begin to brown on the edges).
In a bowl, mix sour cream, cilantro, lime juice, cyan pepper and chili pepper thoroughly. Give the mixture a taste – if you’re looking for an extra kick, add more cyan pepper and chili pepper to taste. Serve fries while they are hot! Enjoy!
