My favorite way to discover a restaurant that uses Tillamook products is on accident —and that’s exactly what happened Labor Day weekend while visiting Bend with my family. My husband, one-year-old son and I had just finished a gorgeous hike around Sparks Lake and were looking for something to fill our bellies and cool us down on a 90 degree day in Central Oregon. A good friend had suggested we check out 10 Barrel Brewing Company. It was easy to find on our way back into town so we stopped for a bite. We hit the jackpot!

Not only was the atmosphere perfect for a warm, end-of-summer, day with a large outdoor patio and garage doors that let indoor diners catch a breeze — it was definitely conducive to carting a little one along for dinner (not always an easy task).

But the real treat came when I spotted Tillamook on the menu, more than once. It was hard not to skip dinner and go straight for the Ice Cream Sundae with Tillamook Vanilla Bean Ice Cream — but I left room, and waited. It was well worth the wait. Tillamook Ice Cream really does have that ‘wow’ factor! The sundae was pretty simple…chocolate syrup, nuts, whipped cream and a cherry. Perfect!

Summer may be over (although those of us in the Pacific Northwest are still celebrating, as we had to wait quite a while for sun this year), but ski season is just around the corner. So if Mt. Bacon and Cheese Omelet

Start your day off with a bacon and cheese omelet that’s easy to make and won’t leave you feeling bloated. A simple take on an old-time favorite! This delicious egg creation takes about 15 minutes to make and is sure to satisfy bacon and cheese connoisseurs.

Bacon and Cheese Omelet Ingredients

Ingredients

3 eggs
3 strips of bacon
1 cup Tillamook Medium Cheddar Cheese, shredded
¼ cup tomatoes, sliced
3 green onions, sliced

PREPARATION

Bacon
Cook the bacon over a medium high heat until it becomes crispy. Remove the bacon from the pan and cover with a paper towel to soak up any residual grease. After it has cooled, tear the bacon into bite-sized chips.

Crack 3 eggs into a bowl and whip. Add a little milk to the eggs for a fluffier omelet.

Assembly of the Omelet
Start off by heating up a fry pan over medium heat and add a tablespoon of Tillamook Butter to prevent the omelet from sticking and burning. After the butter has melted and is fully layering the bottom of the pan, poor in your egg mixture. When the eggs have cooked for a minute or two and the bottom of the egg mixture is solid, flip the omelet over to form a half circle.

The next step (yay!) is to add toppings. First, spread cheese all-over the top of the omelet, then add the bacon chips and sliced green onions. After the bacon and onions have melted into the cheese, remove the omelet from the pan and sprinkle on the tomatoes. Season to taste with some salt and pepper and voilà – a tasty meal!

Before I can even get the lid all the way off of my Tillamook Yogurt, my cat is in my lap, aggressively pushing his face into the container to try to get a little lick for himself. Every time. It never fails. I can’t really blame him for trying though.  I might turn into a meowing, crazed glutton if someone tried to deny me Tillamook Yogurt, too!
