    I cannot wait to try this new cheddar cheese! My mouth is already salivating with the thought of adding it to my macaroni & cheese recipe. When I make mac and cheese, I use 3 pounds of cheese– extra sharp cheddar, sharp cheddar, and mozzarella. With the addition of the new vintage white, I’m planning on using it to replace the mozzarella for another taste of cheesy goodness. One can never have enough Tillamook cheese!

    The first thing I would make is a fabulous grilled sandwich: sourdough bread, dijon mustard, thin sliced roast beef, thin sliced tomato, all topped with Tillamook White Sharp Cheddar and grilled to toasty perfection.

    January 31st is our 22 anniversary and we’ll be making our signature 4 cheese Mac and Cheese! What a treat it would be to use this Vintage Sharp Cheddar.
    I can remember my Dad sharing his block of extra sharp Tillamook Cheddar in the black label on his birthday and holidays as that was his “treat”! Coming from New Zealand he always said it was the closest to what he remembered as a kid.
    Can’t wait to get some for myself.

    I can’t wait to try the Vitage White Sharp Cheddar! The 1st dish I will prepare, as soon as I can pick up a loaf at my local store, is Cheese Enchillada’s with home made sauce and plenty of cheese.

    The first thing I would do is get a box of crackers and my Tillamook cheese and watch the Superbowl and eat the whole thing!!! Than I will get another one and shredd it and put it in my homemade shredded beef burritos!!!

    Is this different from the X sharp white cheddar you already have avialble? Besides,being great with crackers and just by itself, we add it to chowder — just added it to a salmon chowder we fixed the other night. I just had left overs with a grilled cheese sandwich (and yes, the white cheddar makees excellent grilled cheese too) I can’t eat much yellow chees (stomach issues) but can gorge on the white stuff til my heart’s content

    With this new cheese, I would cook a Salvadorean dish , called chilaquiles, is a thick tortilla, stuffed with cheese and wrapped in egg, and fried ..cooked with a tomato sauce with spices is it simply delicious .!!!

    Great question! This new flavor is just Vintage White Sharp, so it’s between the Vintage White Medium and the Vintage White Extra Sharp. Since you’re a fan of the other Vintage White Cheddars, I have a feeling you’ll like this one too! I couldn’t agree more about the grilled cheeses – yum!

    I can’t wait to make our old family CHEESE ENCHILADAS recipe with the new cheese! You’ve never quite had enchiladas like these before. We start out with huge flour tortillas (white or yellow), spreading Red Enchilada Sauce liberally on the bottom of a large baking pan. Then we brown up some crumbled Jimmy Dean Sausage (Sage recipe) in a fry pan, then saute sliced Green Onions, Yellow Onions, canned diced Mushrooms and sliced Black Olives in with the mix. Take this mixture along with a small amount of cubed Velveeta cheese (for smoothness) mixed in with the grated Tillamook Cheddar cheese and roll it all together. Place rolled enchiladas in your baking pan. Add more sauce on top and finally smother it all with more grated Tillamook Cheddar and a sprinkling of real bacon bits on top. Bake at 350 degrees until golden brown and bubbly all around. Serve with liberal dollops of Sour Cream and/or Guacamole on top.

    OH YEAH! YUMMmmmmm!

    I am SO excited to see Aged Cheddar! I have missed my Bandon Aged Cheddar. There is absolutley NOTHING you could cook with aged cheddar! Because…… the ONLY way to eat aged cheddar is in cubes on toothpicks! I savor every last extra sharp taste and could eat the entire loaf! It is a migraine trigger – but the only migraine trigger that I say “OH! Extra Sharp!! Yes Yes Yes! So worth 3 days of pain!”
