Your Monterey Jack cheese taste bad. It's gooey right out of the package. It's so bad it can't be put through a decent shredder because it clogs it up. A really good MJ cheese is Joseph Farms (Modesto Calif. A Gallo Company). It makes you want to carve up the entire block and just have a pig-out snack-fest. I don't think you let the cheese age long enough, the enzymes are still too active and kills the taste. Don't be such a mass-production about making the cheese. Take some pride in what you do.
