Tommy Habetz, Chief of Cheese
Tommy Habetz was born in Bridgeport, Connecticut. He began his culinary career at Mesa Grill in New York City. Tommy has trained under renowned chefs, including Paola di Mauro at her home outside of Rome, Italy. This experience influenced Tommy’s love for Italian cooking. Tommy moved to Portland, Oregon, in 2002. He worked at several reputable restaurants before moving on to his own projects. In 2008, Tommy and Nick Wood opened Bunk Sandwiches. Two years later, they opened Bunk Bar.
Nick Wood, Sargeant Sandwich
Nick Wood’s interest in cooking began in his hometown of Cincinnati, Ohio. He then moved to Charleston, South Carolina, where he developed a love for Southern cuisine while attending Johnson and Wales University. Nick later moved to New Orleans to study classic Creole cuisine. After Hurricane Katrina, Nick took over as Executive Chef at Martinique Bistro and helped reopen the restaurant, making it one of the first to open its doors after the disaster. In 2006, Nick moved to Portland, Oregon, where he met future business partner Tommy Habetz.
