Take a perfectly delicious California Cobb salad and kick it in the pants. Oh yeah. Tillamook Pepper Jack Cheese and jalapeño bacon fire up this classic meal of a salad, making it mouthwateringly better than the original.
“We love to feature cheese in our salads at simplethings. One of our most popular salads is our Classic California Cobb. We’ve updated our version by adding some spice with Tillamook Pepper Jack Cheese and jalapeno bacon.” – Andy Paxson of simplethings
10 oz package mixed organic greens
½ cup (4 oz) balsamic vinaigrette
½ lb (4 oz) prepared oven roasted turkey, shredded
8 grape tomatoes
4 slices jalapeno or regular bacon (we like Coastal Caliente brand), cooked and chopped
1 avocado, diced
½ cup (2 oz) Tillamook Pepper Jack Cheese, diced
2 soft boiled eggs
Place mixed greens in a large bowl. Add the balsamic vinaigrette and toss until completely coated. Place equal amounts of salad on two large plates. Atop each mound of greens, place the turkey, tomatoes, bacon, avocado, and cheese. Divide all ingredients equally per salad. Slice the eggs in half and place 2 halves on each plate.
