Green Chile Bacon Burger

“Growing up, I didn't know about Hatch chiles, but when I moved to Austin I went bonkers for them every August when the season comes around. We grill year-round, and I love to change up our basic recipe depending on what's available. For this burger, I thought the special green Hatch chiles would be a great addition to a standard burger, and of course, everything is better with bacon. The best part is that you can add as much chile as you like, or even pile more on top of the delicious Tillamook cheddar - go crazy!” - Megan Myers of Stetted

Ingredients
  • 1 pound ground grass-fed beef
  • 4 slices thick-cut bacon, cooked until crispy and crumbled
  • ΒΌ cup roasted diced green chiles (such as Hatch variety)
  • Salt and pepper to taste
  • 4 Tillamook Medium Cheddar Cheese slices
  • 4 hamburger buns
  • Tillamook Unsalted Butter
  • Sliced avocado
  • Pickled onion
Directions
  • Step 1

    Preheat grill.

  • Step 2

    Mix together beef, bacon crumbles, green chiles, salt, and pepper. Divide mixture into four equal parts and shape into patties, creating a small well in the center of each patty.

  • Step 3

    Cook burgers 3-4 minutes per side. While the burgers are cooking, butter tops and bottoms of hamburger buns. In the last minute of cooking, add the buns to the grill butter-side down and grill for 1 minute.

  • Step 4

    Remove buns to serving plate, and place burgers on bottom halves, topping with cheese slices immediately. Top burgers with sliced avocado and pickled onions, and enjoy!
