KGB Bacon Pimento Cheeseburger

Behold, king of the cheeseburgers. This secret D Bar recipe starts with a Kobe beef patty and adds spicy pimento spread made with two kinds of Tillamook Cheese, all topped with a bacon-cheese waffle crown.

“Maybe it’s silly to want to try and make a cheeseburger better but that was my goal. I started by switching to Kobe beef instead of a traditional ground sirloin or chuck. Then I thought why just a bun-what about a savory cheesy waffle instead! I love cheese as much as anybody and it doesn’t really need fixin’ but then I thought about how to step up the traditional slice of cheese and my thoughts turned to my time in Mississippi. I always loved pimento cheese spread but thought it would be better with better cheese, jalapeno and with bacon inside. In this recipe, I left out the actual jalapeno and opted for Tillamook’s Hot Habanero Jack to get the splash of heat this burger needs. Ingredients
  • Kobe Burger Mix
  • 2 ½ lbs ground Kobe beef
  • 1 teaspoon salt
  • 2 tablespoons + 1 teaspoon Worcestershire sauce
  • ¼ teaspoon black pepper
  • 1 oz pasteurized egg yolks
Directions
  • Kobe Mix
  • Step 1

    Combine all ingredients in a mixing bowl and mix thoroughly.

  • Step 2

    Form into patties appropriate for your bread selection. Remember, Kobe really cooks down so go bigger than normal. We use 2 oz balls for our Kobe sliders and they end up half the size.

  • Pimento Cheese Spread
  • Step 1

    Whip together diced pimento with cream cheese. Add natural sour cream, salt, pepper, Dijon mustard, and mayonnaise, and blend well.

  • Step 2

    Add shredded Hot Habanero Jack and Medium Cheddar Cheese. Add chopped bacon, if desired. Taste for seasoning then chill completely.

  • Cheesy Waffle
  • Step 1

    Combine all dry ingredients in mixer bowl with paddle. On low speed add eggs, buttermilk, and butter and mix until well combined. Add cheeses, bacon, chives, and sea salt. Mix just until combined.

  • Step 2

    Pour batter into waffle iron and grill according to manufacturer’s instructions.

  • Assemble
  • Step 1

    Start with warm waffle and smear with some pimento spread. Spread pimento-cheese mixture on the other waffle, top it off with the Kobe patty and more pimento-cheese mixture.

  • Step 2

    Melt in broiler for a few minutes. Top off with caramelized onions, bacon strips, lettuce, tomato, and close with the top waffle. Slice in half - use toothpicks or bamboo skewers to hold together.

  • Step 3

    Fill plate with roasted garlic parmesan fries.
