Spicy Cobb Salad

Take a perfectly delicious California Cobb salad and kick it in the pants. Oh yeah. Tillamook Pepper Jack Cheese and jalapeño bacon fire up this classic meal of a salad, making it mouthwateringly better than the original.

Ingredients
  • 10 oz package mixed organic greens
  • ½ cup (4 oz) balsamic vinaigrette
  • ½ lb (4 oz) prepared oven roasted turkey, shredded
  • 8 grape tomatoes
  • 4 slices jalapeno or regular bacon (we like Coastal Caliente brand), cooked and chopped
  • 1 avocado, diced
  • ½ cup (2 oz) Tillamook Pepper Jack Cheese, diced
  • 2 soft boiled eggs
Directions
  • Step 1

    Place mixed greens in a large bowl. Add the balsamic vinaigrette and toss until completely coated.

  • Step 2

    Place equal amounts of salad on two large plates. Atop each mound of greens, place the turkey, tomatoes, bacon, avocado, and cheese.

  • Step 3

    Divide all ingredients equally per salad. Slice the eggs in half and place 2 halves on each plate.
