What was the inspiration behind your menu?
At The Creamery, I wanted to honor what Tillamook does everyday in the right way, but with chef-driven adjustments. These recipes here inspired what ended up on the menu, but are now translated for you to enjoy at any time with your family.

Tell us about the first time you tasted Tillamook cheese.
My wife grew up in Portland and she forced me to eat it one day. I was adamant nothing could beat my dear East Coast cheddars, but this did! I was hooked in the first bite. The way it melts? Forget about it. It blows my mind.

Tell us a little bit about your restaurant, Irving Street Kitchen, and the concept behind it.
It is inspired by Julia Child and her simple refinement, without pretension. Irving Street in Cambridge, MA is the street Julia’s original PBS show was filmed on and, purely by coincidence, our location in Portland. It’s a place to just relax and enjoy.
