We love grilling over Memorial Day Weekend for many reasons. For us in the PNW, it’s a symbolic celebration of all the outdoor fun that awaits after a long and rainy winter and spring.

Grilling serves up an opportunity to get creative with your recipes and do something outside of your kitchen comfort zone. We’re going to show you what we dreamed up for this weekend’s menu and how you can use some of our Tillamook favorites to take your grilling to the next-level.  

 

Grilled Hasselback Potatoes with Tillamook Sharp Cheddar Slices

As fun as these cheesy Hasselback potatoes are to serve to your guests, they taste even better. The smoky grilled potato filled with sharp and flavorful Tillamook Sharp Cheddar Cheese and topped with extra creamy Tillamook Sour Cream will have you wondering if there will ever be another way to eat potatoes.

SERVING SIZE: 4

INGREDIENTS

DIRECTIONS

  1. Preheat the grill to high heat.
  2. Carefully cut vertical slits in each potato every ½ inch. Do not cut all the way through.
  3. Heat potatoes in microwave to reduce grilling time. Place potatoes on a microwave-safe plate and microwave on high for 5 minutes. Flip potatoes and microwave another 5 minutes.
  4. Place potatoes onto individual sheets of heavy-duty aluminum foil and brush with olive oil. Seal the potatoes tightly in tin foil to create a pouch and place onto grill over indirect heat. Grill 30-40 minutes until tender.
  5. Remove potatoes from grill, carefully open tin foil pouch, and place 1 of the cheese slice halves into each potato slit. Reseal pouch and continue grilling until cheese is thoroughly melted, about 5 minutes.
  6. Top with a dollop of Tillamook Sour Cream and season with salt and pepper to taste.
  7. Serve in tin foil boats and rejoice.

 

Grilled Turkey Avocado Cheeseburgers

Flavorful, juicy, and tender, turkey burgers are a delicious and wholesome BBQ dish. Try topping your grilled patties with delicious, bold Tillamook Sharp Cheddar Slices and fresh avocado slices for amazingly mouthwatering burger bites.

SERVING SIZE: 4

INGREDIENTS

  • –    For patties
  •      –    1 pound ground turkey
  •      –    1-2 tablespoons extra virgin olive oil
  •      –    1 tablespoon Worcestershire sauce
  •      –    ½ teaspoon salt
  •      –    ½ teaspoon pepper
  •      –    Other seasons per preference
  • –    Whole wheat hamburger buns
  • –    Tillamook Sharp Cheddar Slices
  • –    Ripe avocado
  • –    Butter lettuce
  • –    Tomatoes
  • –    Red onion

DIRECTIONS

  1. In a bowl, gently combine patty ingredients, being careful not to over-knead the meat. Sprinkle in any other desired seasonings, combine, then form into patties, about ½ inch thick.
  2. Heat grill to medium-high heat. Brush the grill grate with olive oil so the patties don’t stick.
  3. Cook on the grill over direct heat for 5 minutes and flip. Grill until almost cooked through, about 4 minutes, then top each patty with a Tillamook Sharp Cheddar Slice and continue cooking until cheese and melted and burger is done with juices running clear (reaching 165° internally if using a thermometer).
  4. Top buns with desired fillings then add burgers, finishing with fresh avocado slices.
  5. Serve, eat, relish, repeat.

 

Grilled Asparagus with Tillamook Three Cheese Sauce Starter

The key to grilling asparagus is to look for thick, robust spears for better flavor that hold up well when grilled. Their distinct, seared flavor is made even better when topped with topped with our rich and creamy Three Cheese Sauce, which mixes and melts in 5 minutes so you can focus less on stirring, more on serving and enjoying.

SERVING SIZE: 4

INGREDIENTS

  • –    1 pound fresh, robust asparagus spears, tough ends trimmed
  • –    2 tablespoons olive oil
  • –    1 (6.5 oz.) package of Tillamook Three Cheese Sauce Starter
  • –    1 cup 2% milk
  • –    Salt & pepper to taste

DIRECTIONS

  1. Preheat the grill to high heat.
  2. Lightly coat asparagus with olive oil. Season with salt and pepper to taste.
  3. Brush grill grates with olive oil and place asparagus crosswise so they don’t fall through.
  4. Grill over direct, high heat for 2-4 minutes to desired tenderness. Turn often to cook evenly on all sides.
  5. Remove from grill and set aside.
  6. Meanwhile, heat a cast iron skillet over the grill. Once hot, add the Tillamook Three Cheese Sauce Starter and seasoning blend, followed by the milk. Cook, stirring constantly, until the cheese is melted and creamy (about five minutes).
  7. Drizzle immediately over asparagus and pour remainder in a serving bowl. Sprinkle with more salt and pepper to taste.
  8. Serve and savor.

 

Jam-Packed Sugar Cookies Ice Cream Sandwiches

Even after all the cheesy, melty deliciousness that came before it, this dessert won’t be upstaged. Crispy sugar cookies baked on the grill and filled with extra creamy Jam-Packed Sugar Cookie Ice Cream makes for a super-scrumptious BBQ finale that’s easy to make and hard to forget.

SERVING SIZE: 12 ice cream sandwiches (24 cookies)

INGREDIENTS

  • –    Sugar Cookie Dough
  •     –      2 ¾  cups all-purpose flour
  •     –      1 teaspoon baking soda
  •     –      ½ teaspoon baking powder
  •     –      1 cup Tillamook Unsalted Butter, softened
  •     –      1 ½  cups white sugar
  •     –      1 egg
  •     –      1 teaspoon vanilla extract
  • –    Tillamook Jam-Packed Sugar Cookies Ice Cream

DIRECTIONS

  1. In a small bowl, combine flour, baking soda, and baking powder.
  2. In a large bowl, cream together butter and sugar until smooth. Beat in egg and vanilla.
  3. Gradually add dry ingredients and mix.
  4. Cut a piece of tin foil in the size of your grill grate. Before the grill is hot, try forming the tin foil into the grooves of the grate to retain “grill marks” on your cookies.
  5. Heat grill to medium high heat.
  6. Roll cookie dough into balls (about the size of a golf ball) and place onto tin foil, lightly pressing the dough down and leaving about 2 inches between balls. Use a cutting board to transfer the cookies and foil.
  7. Transfer foil and cookies to grill, close grill, and bake over indirect heat, about 8-10 minutes.
  8. Transfer foil and cookies to a cooling rack to cool completely.
  9. Form sandwiches with 2 cookies and a generous scoop of Jam-Packed Sugar Cookies Ice Cream.
  10. Serve and delight.

I realize I could always look in my cookbook, but it'd be nice if (especially on the grilled asparagus recipe) you'd say approximately how many it serves.

We buy Tillamook Butter salted, ice cream, and Sharp and Extra Sharp Cheddar Cheese! There was a lady that was observing what I had purchased and said, "Wow, I didn't know Tillamook made all that stuff too!" I said, "Well, you should try it!" or "You could just go to Tillamook, I did!" I was moved from "The Land of Enchantment" to Portland, Oregon to Tillamook and experience it yourself!!"

Thanks for stopping by our blog! According to our Where to Buy tool (https://www.tillamook.com/where-to-buy.html) just about every Walmart and Ralphs in your area should carry our Three Cheese Sauce Starter. This tool doesn't show us live inventory levels though, so please call ahead before making any special trips.
