Craving something sweet, local, and ice-cold this summer? Shake things up with Late Shake and try their monthly summer specials made with (surprise!) Tillamook Ice Cream.

If you needed yet another reason to look forward to the weekend, look no further than Late Shake, a weekends-only, milkshake pop-up based in Portland, Oregon. Late Shake hand-spins milkshakes exclusively on select Friday and Saturday summer evenings from 7pm-11pm inside the Dapper & Wise Coffee shop. Their innovative flavor combinations have always been made creamier with Tillamook Vanilla Bean Ice Cream, but this year they’ve decided to make their shakes extra special with the newest members of the Tillamook Ice Cream family. This summer, stop by and try the monthly specials made with Tillamook Special Batch Ice Cream flavors. Summer is short and each special will only be available for the month, so get shaking!

 

Monthly Specials Menu

May: Chocolate Old Fashioned Pendleton Whisky & Maple Frozen Custard with Late Shake’s house-made Woodblock chocolate sauce, misted on top with orange extract and Angostura bitters, topped with a maraschino cherry.

June: Cinnamon Totes Crunch Sea Salt & Honeycomb Toffee Frozen Custard special batch base with house-made maple, cinnamon, vanilla and cardamom syrup.

July: A shake in collaboration with Prince Coffee based off of their house-made Stroopwaffles, topped with one, and using Sea Salt & Honeycomb Toffee Frozen Custard.

August: Boozy S’mores – S’mores shake with Pendleton Whisky & Maple Frozen Custard, topped with toasted marshmallow and graham cracker.

Cinnamon Totes Crunch Shake

To make the Cinnamon Sauce

Ingredients:

  • –  1/4 cup (75 grams) water
  • –  3 tbsp (45 grams) sugar
  • –  4 packed tbsp (50 grams) dark brown sugar
  • –  1 tbsp (20 grams) maple syrup
  • –  1 tbsp (7 grams) ground cinnamon
  • –  1/4 tsp (2 grams) sea salt

Recipe:

  1. Heat water over stovetop or in the microwave until it is hot but not boiling.
  2. Add all other ingredients. Whisk until well combined and all of the sugar is dissolved. Keeps refrigerated for up to 4 weeks. The cinnamon will settle over time, so stir or shake before using.

To make the Cinnamon Totes Crunch milkshake

Ingredients:

  • –  2 large scoops (250-260 grams) Tillamook Special Batch Sea Salt and Honeycomb Toffee
  • –  2 ounces (80-90 grams) rice milk
  • –  1 full tbsp (25 grams) Cinnamon Sauce
  • –  Cinnamon Toast Crunch cereal for topping
  • –  Caramel sauce for topping (optional)

Using a conventional blender:

  1. Scoop ice cream into the blender, and then add the rice milk and Cinnamon Sauce.
  2. Take a long spoon and stir all ingredients together a couple times, to promote even and smooth blending.
  3. Start by pulsing the ingredients for a few short bursts, then continue to mix until the shake surface is smooth and lump-free. If the ice cream is a little hard and refuses to mix, take the cover off and stir a few more times with a long spoon. Blending time should be 30 seconds to one minute — blending much longer than that can result in a melty shake.

Using an old-fashioned shake mixer:

  1. Scoop ice cream into the milkshake tin, and then add the rice milk and Cinnamon Sauce.
  2. Take a long spoon and stir all ingredients together a couple times, to promote even and smooth blending.
  3. Pulse the mixer a few times, and continue to blend until the surface of the shake is smooth and no ice cream chunks remain. Remember not to over-mix and risk a melty shake.

Whichever method you use, top with Cinnamon Toast Crunch cereal (and a touch of caramel sauce, if you’re feeling wild).
