In 1969, pioneering Tillamook cheesemaker Dale Baumgartner was making our cheddar in cheesecloth, hand-waxing and wrapping blocks in heavy brown paper. He was famous for tucking those packages away, pulling them out decades later to discover they’d gotten better. Much better.

Today, a team of trained supertasters with a combined 100 years of experience, manages our private collection of aged cheddars. QC and consistency are closely observed from the time each vintage enters our specially calibrated aging vault until it lands in your cheese counter.
