  • Black Pepper Cheddar Biscuits
  • 2½ cups all-purpose flour
  • 1½ teaspoons kosher salt
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ cup Tillamook Unsalted Butter, cut into 8 to 10 pieces, cold + 2 tablespoons, melted (reserve for brushing biscuits before baking)
  • 1½ cups Tillamook Smoked Black Pepper White Cheddar Cheese, shredded
  • 1 egg, cold
  • ½ cup heavy cream, cold
  • ½ cup nonfat buttermilk, cold
  • Bacon Jam
  • 1 lb bacon, diced into ½ inch pieces
  • 1 teaspoon garlic, chopped
  • 1 tablespoon shallots, minced
  • ¼ cup sherry vinegar
  • ¹⁄₃ cup brown sugar
  • ¼ cup maple syrup
  • ¹⁄₈ teaspoon allspice

  • Step 1

    In a mixer fitted with a paddle attachment, mix flour, salt, baking powder, and baking soda together for 15 seconds.

  • Step 2

    Add pieces of butter and shredded cheddar then mix for 1 minute until mixture appears crumbly.

  • Step 3

    In a separate bowl mix, egg, cream, and buttermilk together, pour into mixer and mix for 15 seconds to combine.

  • Step 4

    Pour dough out onto clean work surface dusted with flour, and push the dough gently into a square. Roll out into a 1-inch thick sheet and using a 3-inch cookie cutter, cut out biscuits.

  • Step 5

    Place on a baking sheet lined with parchment paper and brush with melted butter. Bake at 350°F for 18-22 minutes in the center rack.

    TIP: Be careful not to overwork the dough! If you want fluffy, flakey biscuits the key is to be gentle with the dough and not overwork it – otherwise you might end up with a flat, dense, or chewy biscuit.

  • Bacon Jam
  • Step 1

    Over medium heat, brown bacon in a skillet (should take about 15 minutes). Drain off fat.

  • Step 2

    Add garlic and shallots and sauté until translucent, being careful not to burn (will take about 1 minute).

  • Step 3

    Add sherry vinegar, brown sugar, maple syrup, and allspice and cook until thickened (about 5 minutes).

  • Step 4

    Once cool enough to handle, put mixture in a food processor and give it 4 to 5 pulses to break up the pieces.

  • Step 5

    Serve bacon jam warm on top of biscuits.

  • Step 6

    Bacon jam can be stored in an airtight container, refrigerated, for up to 2 weeks.
