Braised Beef Poutine

  • 2-3 wagyu cheeks* or 4-6 boneless short ribs
  • Salt & pepper to taste
  • 1 onion, diced
  • 1 carrot, peeled & diced
  • 1 celery stalk, diced
  • 1 bottle red wine
  • 2 cups beef broth
  • 1 bay leaf
  • 1 star anise
  • 1 clove
  • Home fries or your favorite store-bought fry, cooked according to directions on package
  • Tillamook Cheese Curds

    *Wagyu cheeks (or beef cheeks) can be purchased from your local butcher. Make sure and request to have them cleaned before taking home!
  • Step 1

    Season meat with salt and pepper, then sear over medium-high heat in a wide and deep oven-safe pot (such as a Dutch oven), keeping in mind that this will be the pot you braise in.

  • Step 2

    Once meat is caramelized (about 5-7 minutes), add in the vegetables (onion, carrot, and celery) and cook until they are caramelized as well.

  • Step 3

    Remove from heat and remove meat and vegetables. Set aside.

  • Step 4

    Deglaze pot with red wine by bringing the pot back to the heat, adding the bottle of wine, and cooking for 2 minutes. Make sure and scrape the bottom of the pan to pick-up the flavors left from cooking the meat and vegetables.

  • Step 5

    Add broth to the pot, return the beef and vegetables, and add the bay leaf, star anise, and clove.

  • Step 6

    Place pot in oven at 300°F for 2-3 hours or until completely tender. You may also use a slow cooker for this.

  • Step 7

    Remove meat and shred while warm. Discard vegetables and reduce remaining liquid until thickened slightly. Return shredded meat to the pot.

  • Step 8

    Place shredded meat over home fries or your favorite store-bought fry (that have been fried) in a baking dish.

  • Step 9

    Add a few ounces of cheese curds on top and broil in oven over high heat until melted (about 3 minutes).
