Ingredients
  • Crust
  • ¾ cup (1.5 sticks) Tillamook Unsalted Butter, at room temperature
  • 2 cups all-purpose flour
  • ½ cup confectioner’s sugar
  • ½ teaspoon salt
  • Filling
  • 4 egg yolks
  • ⅔ cup sugar
  • ¼ cup cornstarch
  • ¼ teaspoon salt
  • 2 tablespoons cocoa powder
  • 2¾ cups milk
  • 3 ounces unsweetened chocolate, chopped
  • 3 tablespoons Tillamook Unsalted Butter
  • 1 teaspoon vanilla extract
  • 2 tablespoons bourbon
Directions
  • Step 1

    Preheat oven to 350°F. In a mixer combine the butter, flour, confectioner’s sugar and salt. Mix until dough comes together

  • Step 2

    Press the dough into the bottom and up the sides of a lightly greased 9-inch pie dish. Poke several small holes in the dough with a fork, then bake for about 12 minutes, until golden brown. Allow shell to cool completely before filling.

  • Step 3

    Place the egg yolks in a bowl, whisk to combine then set aside.

  • Step 4

    In a large saucepan, whisk together the sugar, cornstarch, salt and cocoa powder. Stir in the milk, and add unsweetened chocolate. Cook the mixture over medium-high heat until it thickens and begins to bubble. Reduce heat and cook for 2 more minutes.

  • Step 5

    Remove from heat pour about ¼ of the mixture into the egg yolks, whisking the yolks constantly. Pour the yolk mixture into the saucepan and return to medium-high heat, stirring constantly. Allow the mixture to come to a gentle boil, cook for 2 more minutes then remove from heat.

  • Step 6

    Gently stir in the butter, vanilla and bourbon. Pour mixture into the cooled pie shell and refrigerate for at least 2 hours before serving with a scoop of Tillamook Mint Chocolate Chip Ice Cream!
