Apple pie is amazing, but it’s even better when topped with buttery, crunchy crumble. A slice of this pie also makes for a delicious breakfast if you’re too full for a slice after Thanksgiving dinner. We know what you’re thinking, and we won’t tell if you top a slice with Tillamook Old-Fashioned Vanilla Ice Cream in the morning!

Let's Make This Recipe!

  • Crust
  • 1 cup + 2 tablespoons all-purpose flour, plus more for rolling
  • ¼ teaspoon salt
  • ½ cup (1 stick) Tillamook Unsalted Butter, very cold & cut into pieces
  • 1 teaspoon white vinegar
  • 2 tablespoons ice cold water
  • 1 teaspoon ground cinnamon
  • Filling
  • 5 apples
  • ½ teaspoon lemon juice
  • ½ teaspoon lemon zest
  • ¾ cup sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • Topping
  • 1 cup rolled oats
  • ¾ cup brown sugar
  • ¾ cup all-purpose flour
  • ½ teaspoon cinnamon
  • 6 tablespoons Tillamook Unsalted Butter, melted
  • Step 1

In a large bowl, combine the flour and salt for the crust. Add the butter and quickly work it into the flour with your fingers until the largest chunks of butter are about the size of a hazelnut. Pour in the vinegar and water, use fingers to combine. Add more water if necessary to bring dough together.

  • Step 2

Once the dough comes together, transfer it to a floured surface, flatten into a round disk, about 1 inch thick. Cover in plastic wrap and refrigerate for at least 1 hour.

  • Step 3

While the dough is chilling, peel and core each apple, then slice into ¼ inch thick slices. Place the apples in a bowl and gently stir the lemon juice in to coat the apples.

  • Step 4

Add the lemon zest, sugar, flour, cinnamon, nutmeg and salt to the apples. Stir until all of the apples are coated. Set aside.

  • Step 5

In another bowl, combine the rolled oats, brown sugar, flour, and cinnamon to make the topping. Pour in the melted butter. Stir to combine, then set aside.

  • Step 6

Preheat the oven to 350°F. To assemble, remove the crust from the fridge and roll it out on a floured surface into a round sheet, about ¼ inch thick.

  • Step 7

Transfer the dough to a lightly greased 9-inch pie dish. Press the dough into the bottom of the dish and trim off the excess dough (there should still be about ½ inch hanging off the side all the way around). Tuck the overhang under the dough to create a thick edge, and use your fingers to crimp.

  • Step 8

Carefully pour the filling into the pie shell. Sprinkle all of the topping over the top of the apples.

  • Step 9

Bake for 40 to 45 minutes. If you notice the crumble is browning too quickly, carefully cover the pie with tin foil and continue to bake.

  • Step 10

Allow the pie to cool for at least 15 minutes before serving with a big scoop of Tillamook Old-Fashioned Vanilla Ice Cream!
