  1. Over a double boiler, heat beer in a bowl on high heat. Allow the beer to reduce by 1/3.

  2. Whisk in flour and spices and continue cooking until slightly thickened.

  3. Fold in the cheese and whisk over high heat until fully melted.

  4. Place fondue cheese in a blender for 30 seconds on high speed.

  5. Keep hot and serve with cured meats, crackers, and other Tillamook Farmers' Collection cheese like Smoked Black Pepper White Cheddar.
