  • Chive Sour Cream
  • ½ cup Tillamook Sour Cream
  • 2 tablespoons chives, minced
  • Salt & black pepper to taste
  • Step 1

    Prepare Chive Sour Cream by mixing sour cream, chives, salt, and black pepper together. Chill and set aside until ready to use.

  • Step 2

    In a deep pot melt butter over medium-high heat. Add leeks and sweat for 2-3 minutes. Add the potatoes and cook for another 2-3 minutes. Pour in all liquid ingredients, bring to a boil, then reduce to a simmer.

    TIP: “Sweating” is similar to sautéing, but it occurs at a lower heat setting. The sweat technique is meant to cook ingredients, but not brown them, to keep the integrity of the ingredients’ natural colors.

  • Step 3

    Test the potatoes with a fork. Once the potatoes are tender (after about 15-20 minutes), pour mixture into a blender and blend until smooth.

  • Step 4

    Add blended mixture back to pot and fold in cheddar. Season with salt and nutmeg.

  • Step 5

    Garnish soup with Chive Sour Cream to serve.
