Red Velvet Cake Parfait

This is Haven Gastropub’s twist on an undeniable holiday classic. They know how to add a gourmet touch to comfort food and this is a recipe that’s fairly easy to prepare, so you can whip up this tasty celebration in about one hour. One bite and you’ll know it was worth the time.

Ingredients
  • Vegetable oil (to grease pan)
  • 2½ cups all-purpose flour
  • 1½ cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon fine salt
  • 1 teaspoon cocoa powder
  • 1½ cups vegetable oil
  • 1 cup buttermilk, at room temperature
  • 2 large eggs, at room temperature
  • 2 tablespoons beet juice
  • 1 tablespoon red food coloring* (optional)
  • 1 teaspoon white distilled vinegar
  • 1 teaspoon vanilla extract
  • Tillamook Old-Fashioned Vanilla 2% Farmstyle Greek Yogurt
  • Toasted pecans, chopped (to garnish)

    TIP: To toast your own pecans, evenly spread pecans out on a baking pan and toast them in the oven at 350°F for 4-5 minutes. Let cool, then chop. That’s all!

    *If you’d like your parfait to have a deep red color, use red food coloring. This is optional, but note your parfait may not be red (rather brown) if you do not use it. Either way your parfait will still be tasty!
Directions
  • Step 1

    Grease a 9”x13” square baking pan with vegetable oil and set aside.

  • Step 2

    Preheat oven to 350°F degrees.

  • Step 3

    In a large bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In another large bowl, whisk together the vegetable oil, buttermilk, eggs, beet juice, food coloring (if using), white distilled vinegar, and vanilla extract.

  • Step 4

    Place wet ingredients into a stand mixer and mix the dry into the wet until a smooth batter forms.

  • Step 5

    Pour batter into the 9”x13” square baking pan, filling with an inch of batter.

  • Step 6

    Bake at 350°F for 15-17 minutes in a convection oven on high, rotating half way. If using a conventional oven, bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

  • Step 7

    Once cool, use a 3” round cookie cutter and cut 4 rounds out of the pan.

  • Step 8

    Cut each round of cake in half horizontally (so you have 2 round halves).

  • Step 9

    On your favorite glass or plate, lay down one round of cake. Place a good layer of Tillamook Yogurt on top, followed by another piece of cake. Garnish with one more layer of yogurt then sprinkle with toasted pecans.
