Spicy Queso Fundido with Shrimp and Tomatoes
- Add 2 tsp of the oil to a medium skillet over medium-high heat. Add the chorizo and cook through, stirring occasionally; about 4 to 5 minutes. In the last minute of cooking, add the minced garlic, stirring to incorporate.
- In a separate medium saucepan, prepare the Tillamook Spicy Queso Sauce Starter according to package directions. Add the garlicky chorizo to the queso, stirring to combine. Wipe out the skillet in which you cooked the chorizo, and add the remaining 2 tsp of oil.
- Season the shrimp with salt and pepper to taste. Cook the shrimp in the pan over medium-high heat, turning once, just until they’re pink/opaque.
- To serve, pour the queso into a serving bowl/dish (or keep it in the pan in which you prepared it) and pile the cooked shrimp on top. Scatter the fresh chopped tomatoes all around and garnish with the chopped cilantro. Serve hot with tortilla chips.
