“This recipe was inspired by recipes in several older cookbooks for Dream Sandwiches, which are actually grilled cheeses. During WWII, my friends and I would go out with the servicemen to the dance halls. During the war everything was required to close at midnight, but that was too early for some of us to go to sleep. So we would all congregate at my house, where my mother would play piano and we would all sing and eat grilled cheese sandwiches.” - Frances Benthin, 2012 Cheese Factory Grilled Cheese Contest Winner

  • Step 1

    Place the bell pepper, prosciutto, Tillamook Sour Cream, mustard, pickle relish, and Tillamook Pepper Jack Cheese in a small bowl and mix together.

  • Step 2

    Spread onto one slice of bread. Top with the Tillamook Vintage White Extra Sharp Cheddar Cheese, cutting the cheese the same size as the bread. Top with second slice of bread. Butter the top of the bread with 1 teaspoon of the butter.

  • Step 3

    Heat a skillet over medium-high heat and melt the remaining butter in the skillet until hot, but not smoking. Place the sandwich butter side up in the skillet. Grill for 2-3 minutes, or until nicely browned.

  • Step 4

    Then carefully turn over and finish grilling on second side for another 1-2 minutes, or until cheese is nicely melted. Slice sandwich in half diagonally, garnish plate with dill slices, cherry tomatoes, olives, and a sprig of dill.

Frances Benthin was the winner of our second annual Tillamook Cheese Factory Grilled Cheese Contest. Her earliest memory of grilled cheese comes from when she was very young, cooking at her home in Portland, Oregon, with her mother, who always had Tillamook Cheese in the house. Frances has been entering cooking contests since 1984.
