Churro Cheesecake

My churro cheesecake is a holiday favorite that brings together all the flavors you love — a buttery, cinnamon-spiced churro crust, a rich and creamy cheesecake filling made with Tillamook cream cheese, and a cinnamon-sugar topping that adds the perfect sweet crunch.

Ingredients

  • 12cup granulated sugar

  • 2 tbsp ground cinnamon

  • 4 tbsp Tillamook Extra Creamy Salted Butter, melted

  • 2-8 oz crescent roll dough sheets

  • 16 oz softened Tillamook Cream Cheese

  • 14 oz sweetened condensed milk

  • 14cup sour cream

  • 2 tsp Mexican vanilla blend or vanilla extract

  • Pinch of salt

  • 2 tbsp all-purpose flour (optional)

  • 2 large eggs

  • Serve with Dulce de leche, hazelnut spread, or sweetened condensed milk (optional toppings)

  • Fresh berries or pecans (optional topping)

  • Whipped cream (optional topping)

  • Preheat oven to 350°F

  • Mix sugar and cinnamon in a small bowl.

  • Grease a 9x13-inch baking dish with butter or cooking spray.

  • Sprinkle half the cinnamon sugar on the bottom, then place one puff pastry sheet on top.

  • In a large bowl, beat cream cheese and sweetened condensed milk until smooth.

  • Add sour cream, vanilla, salt, and flour.

  • Beat in eggs one at a time until fully incorporated.

  • Pour the cheesecake filling over the pastry sheet, then place the second pastry sheet on top. Brush with butter or cooking spray and sprinkle the remaining cinnamon sugar on top.

  • Bake 45 minutes, or until golden and a toothpick comes out clean.

  • Let cool to room temperature, then refrigerate overnight.

  • Run a knife around the edges, slice, and serve. Optional toppings: dulce de leche, hazelnut spread, sweetened condensed milk, berries, pecans, or whipped cream.
