This size is ideal for foodservice when crafting large batches of soups, sauces and sides and great for slicing or shredding what you need and saving the rest for other applications. Using Tillamook® 40 lb. cheese blocks allows for greater consistency of aging, moisture migration and quality control versus larger 640 lb. blocks.
