Cheesy Chopped Chicken Caesar Sandwich
This 20-minute sandwich recipe is sure to be your new fall favorite. Our thick-cut slices add full flavor for an easy weekday win.
Ingredients
2 hoagies, sub sandwich rolls, or brioche rolls
2 cups cubed chicken breast (pre-cooked), cut into ¼ inch chunks
4 big leaves of romaine lettuce, roughly chopped
½ cup mayonnaise
3 tbsp. Dijon mustard
3 cloves garlic, shredded
1.5 tbsp. lemon juice
Zest from 1 lemon
2 anchovies, finely chopped (or 2 tsp. Worcestershire sauce)
1 tsp. kosher salt
2 tsp. black pepper
1 tomato, sliced into wheels
In a medium-sized bowl, thoroughly mix the chicken, lettuce, mayonnaise, dijon mustard, garlic, lemon juice, zest, anchovies (or Worcestershire sauce), kosher salt and black pepper until the mixture forms a thick salad.
Place two slices of cheese and two slices of tomato on each serving of bread.
Top it with a generous helping of the chicken salad mixture.
