Honey Jerk Chicken Sandwich
Juicy grilled jerk chicken with spicy mango aioli and crunchy cucumber slaw is tucked inside soft coco bread with melted Tillamook Smoked Medium Cheddar. It’s spicy, cheesy, sweet and refreshing—all in one bite.
Ingredients
For the chicken:
2 lbs boneless, skinless chicken thighs
2 tbsp jerk seasoning (wet or dry)
2 tbsp honey
1 tbsp soy sauce
1 tbsp olive oil
Juice of 1 lime
For the Spicy Mango Aioli:
½ cup mayo
½ ripe mango, diced
1 garlic clove
1–2 tbsp hot sauce (like Scotch Bonnet or habanero)
Juice of ½ lime
Pinch of salt
For the Cucumber Slaw:
1 ½ cups shredded green cabbage
1 tsp hibiscus powder
½ English cucumber, julienned
2 scallions, thinly sliced
Juice of 1 lime
½ tsp kosher salt
1 tsp sugar
4 coco bread rolls (or your favorite sandwich roll)
In a bowl, mix jerk seasoning, honey, soy sauce, olive oil, and lime juice. Add chicken thighs and toss to coat. Marinate for at least 30 minutes.
Blend mayo, mango, garlic, hot sauce, lime juice, and a pinch of salt until smooth. Chill until ready to use.
In a bowl, toss cabbage, cucumber, scallions, lime juice, salt, and sugar. Let it sit for 10–15 minutes to slightly soften and absorb flavor.
Preheat the grill or grill pan to medium-high. Grill chicken for about 5–6 minutes per side until cooked through and charred in spots. Add Tillamook Smoked Medium Cheddar and let it melt.
Split the coco bread and lightly toast.
Spread a generous layer of spicy mango aioli on the bottom bun, add grilled jerk chicken cheesy, top with cucumber slaw, fresh cilantro, and enjoy!
