Lemon Poppyseed Pie Crust Cookies

I love the idea of a pie crust cookie. A small treat that’s flaky, buttery, and perfectly tender to add a lovely, crunchy topping to any of your summer ice cream sundaes. By using Tillamook Cream Cheese the dough is ultimately tender.

Ingredients

  • 1 14cup all-purpose flour

  • 14tsp kosher salt

  • 18tsp baking powder

  • 14cup Tillamook Cream Cheese, cut into chunks

  • 6 tbsp Tillamook Extra Creamy Unsalted Butter, cut into small cubes

  • 1.5 tbsp heavy cream, plus more for brushing onto the cookies

  • 12tbsp apple cider vinegar

  • 4 cups powdered sugar

  • Juice of 2 lemons

  • 14cup poppyseeds

  • To a food processor, add the flour, salt, and baking powder. Pulse to combine. Next add the cream cheese and pulse until the cream cheese is evenly worked in.

  • Add the butter cubes. Pulse until the butter is worked in but still somewhat visible, about 4-5 pulses. Drizzle in the 1.5 TBSP heavy cream and apple cider vinegar. Pulse until the dough hydrates, another 4-5 pulses.

  • Dump dough onto a large sheet of plastic wrap. Press dough crumbs into a cohesive square. Refrigerate for at least 1 hour.

  • Preheat oven to 375F.

  • Roll dough out dough with plenty of flour, until it measures an even 1/4” thickness. Using a star or circle cutter, cut out as many cookies as you can. This will depend on the size of your cutter. Transfer cookies to a parchment-lined baking sheet. Brush cookies with some more heavy cream to encourage browning.

  • Bake cookies until they are evenly golden, about 12 minutes. Let cool completely.

  • Add powdered sugar to a large bowl. Drizzle in lemon juice, stirring in between every addition, until powdered sugar turns into a thick glaze. Take a cookie and dunk into the glaze, shaking off excess. Transfer back to the tray and garnish with poppy seeds. Repeat with all remaining cookies.
