Mini Baked Potato Bites
Crispy on the outside, fluffy on the inside and packed with bold, melty Tillamook Shreds—these mini potato bites are great on game day and the easiest win ever.

Ingredients
2 lbs mini gold potatoes
4 tbsp Olive Oil
Salt to taste
Pepper to taste
Garlic Powder to taste
3⁄4cup Tillamook Sour Cream
Chives
Bacon Bits (optional)
Wash & dry mini golden potatoes.
Add to cookie sheet, coat in olive oil, salt, pepper, and garlic powder.
Bake at 400 degrees for 40 minutes or until tender, turning potatoes halfway.
Once potatoes are cooled enough to be handled, use a tiny melon baller to scoop out a small portion of the mini baked potato.
Add Tillamook Triple Cheddar Shreds to scooped out portion.
Top with sour cream, chives, bacon bits, and more Triple Cheddar Shreds (or your favorite toppings).
