Movie Night Cheese Fondue

Inspired by my favorite holiday movies, this cozy beer cheese fondue only gets better as it sits. It feeds a crowd, so make sure to have a crowd of movie watchers to share it with!

  • In a food processor or by hand, grate the Tillamook cheddar. Set aside.

  • Place a small fondue pot or small pot over medium-low heat. Add the butter and let it melt.

  • Add in the Dijon mustard, Worcestershire, honey and smoked paprika and stir to combine. Add the flour and mix into a paste.

  • Pour the milk in ¼ cup at a time, stirring often to create a smooth paste.

  • Pour in all of the beer and bring the mixture to a simmer.

  • As the mixture is simmering, stir in the cheese about ½ cup at a time. Taste and season with salt and pepper as preferred.

    • Tip: This cheese dip will thicken as it sits. Serve with your favorite fondue dippers like bread, pickles, potatoes and cold cuts.
