Peanut Butter Swirled Brownies

We all know brownie bites make for an A-tier ice cream topping. But why not make a homemade version, enhanced with enticing swirls of peanut butter, that is oh so better and much more impressive.

Ingredients

  • 9 tbsp Tillamook Extra Creamy Unsalted Butter, in cubes

  • 4.5 oz dark chocolate, chopped

  • 2 large eggs

  • 23cup granulated sugar

  • 12cup all-purpose flour

  • 14cup Dutch-processed cocoa powder

  • 12tsp kosher salt

  • 14cup creamy, natural peanut butter

  • Flaky salt

  • Preheat oven to 375F.

  • Add the butter and dark chocolate to a medium microwave-safe bowl. Microwave on 50% power, stirring every 30 seconds, until completely melted. Set aside.

  • Grease a quarter-sheet pan with oil. Line with parchment paper.

  • To a large bowl, add the eggs and sugar. Whisk with an electric hand mixer until extremely airy and the batter ribbons off the end of the mixer, 3-4 minutes.

  • Dump in the chocolate. Gently fold with a spatula until combined. Then sift in the flour, cocoa powder, and salt. Fold gently until evenly combined.

  • Dump batter into the sheet pan and spread evenly. Drizzle peanut butter in curves and swirls over the batter. You can also use a toothpick to enhance the swirling. Bake brownies for 20-22 minutes, until a toothpick comes out nearly clean. Let cool.

  • Remove brownies to a cutting board. Cut into a 3 x 4 grid. Then cut each square into a triangle. Enjoy with Tillamook Ice Cream.
