

Summery Swiss Cheese Veggie Toast
This 20-minute recipe is all about celebrating what’s in season. Our melty, nutty Farmstyle Swiss Slices are topped with freshly-picked herbs and crunchy veggies for bites that will wow any summer crowd.
Ingredients
2 Persian cucumbers, peeled and sliced into ½ inch thick discs
1 cup cherry tomatoes, halved
½ cup fresh basil, picked
¼ cup fresh mint, finely chopped
2 tsp picked oregano
1 garlic clove, finely chopped
½ cup pitted black olives, cut into rounds
1 tbsp pickling vinegar
2 tsp kosher salt
2 tsp black pepper
2 slices crusty bread, whole wheat or rye
2 tsp olive oil
1 tsp honey
2 tsp balsamic vinegar
1 tsp flake salt
Preheat your oven to broil and prepare a sheet pan with wax paper.
In a large mixing bowl combine avocado, tomatoes, cucumber, herbs, garlic, olives, vinegar, salt and pepper. Chill in your refrigerator as you finish your toast.
Layer two slices of cheese over each slice of bread and broil until completely melted and gooey.
Retrieve your salad from the fridge and spoon a generous amount over each slice of toast. Cut width-ways into four slices, garnish with olive oil, honey, balsamic vinegar and salt.
