These cheesy beef and potato meal prep bowls are perfect for the busy Back to School season. This simple dish is bursting with flavor and is loaded with pico de gallo, guacamole, sour cream, and Tillamook Mexican Four Cheese Farmstyle Shreds.
Ingredients
For the potatoes
1lb yellow potatoes diced
2 tbsp neutral oil
1 tsp chili powder
1 tsp paprika
1 tsp salt
1-2 tsp pepper
For the beef
1lb ground beef
garlic to taste
1 tsp cumin
1 tsp chili powder
For the pico de gallo
1 red Roma tomato
1 onion
1 jalapeño
1 bunch of cilantro
1 lime
Salt and pepper, to taste
For the guacamole
1 avocado
Salt and pepper, to taste
Pico de gallo
Garnish
Dice the potatoes.
In a large bowl add the diced potatoes with oil and spices. Add them to a baking sheet
lined with parchment paper and roast at 400 degrees until crispy. Set aside.Cook the ground beef with the spices. Set aside.
Prepare the pico de gallo by chopping the tomato, onion, jalapeno, and cilantro into small pieces and combining with lime juice. Add salt and pepper to taste.
Then, prepare the guacamole by mashing an avocado, adding salt and pepper to taste,
and a couple of spoonfuls of your pico de gallo, if desired.Assemble your bowls by layering the roasted potatoes, then the ground beef, and
Tillamook Mexican Four Cheese Farmstyle Shreds. Place back in the oven or microwave to melt the cheese, if desired.Top the bowls with your pico de gallo, guacamole, and sour cream, and enjoy!
Tip: Add your desired toppings after melting your cheese so they stay fresh
