Cheesy Smashed Potatoes
3 pounds baby gold potatoes
2 tablespoons everything bagel seasoning, to taste
¼ cup extra virgin olive oil
2 teaspoons salt, for boiling potatoes
Preheat oven to 400 degrees F.
Wash potatoes very well. In a large pot add potatoes, 2 teaspoons sea salt and cover with water. Bring to a boil and reduce heat just so it doesn’t boil over. Boil for 20 minutes or until fork tender. Drain.
On a large sheet tray coated in cooking spray add potatoes in a single layer.
Smash down with the back of a fork.
Drizzle with olive oil, and sprinkle each potato with everything bagel seasoning.
Bake for 15 minutes. Remove from the oven and sprinkle on the Tillamook Sharp Cheddar Shreds.
Bake in the oven for an additional 10 minutes or until cheese is melted. Serve with a side of seasoned sour cream, or your favorite dipping sauce.
