Chocolate, Date, & Halvah Ice Cream Sandwiches
A perfect summer treat elevated with dates, big chocolate chunks, halvah, and Tillamook Ice Cream. Tillamook Vanilla Bean is my go-to but feel free to experiment with other Tillamook Ice Cream flavors like Mudslide or Oregon Dark Cherry.
Ingredients
1⁄2cup dark brown sugar
2 tbsp granulated sugar
1 large gg
1 tsp vanilla extract
1⁄2tsp baking soda
1⁄2tsp kosher salt
1 cup all-purpose flour
6 large pitted dates, chopped (optional)
3 oz dark chocolate, chopped
1⁄4cup halvah (optional)
1 quart Tillamook Vanilla Bean Ice Cream
In a small saucepan over medium heat, add the Tillamook Unsalted Butter. Heat, stirring occasionally, until the butter has browned and smells nutty, about 6-8 minutes. Dump into a large heat-proof bowl.
Add the dark brown sugar and granulated sugar. Whisk for 30 seconds.
Crack in the egg, vanilla, baking soda, and salt. Whisk for 1 minute.
Fold in the flour until almost combined. Then fold in the dates, chocolate, and halvah. Let the dough rest at room temperature for 30 minutes to stiffen considerably.
Preheat oven to 375F. Line 2 baking sheets with parchment paper.
Scoop 3 tbsp sized dough balls (about 60g) and evenly space on the baking sheets. You should get about 10 dough balls.
Bake for 12-14 minutes, rotating the sheets halfway through. Until the edges are golden brown and firm but the center is still soft. Let the cookies cool completely on the trays. Then transfer the cooking to the freezer to cool.
When ready to eat, scoop about 1/2 Cup Tillamook Vanilla Bean Ice Cream onto half of the cookies and sandwich with another cookie.
Eat immediately!
