Extra Pink Ice Cream Sandwiches

In the summer I’m always craving ice cream sandwiches for a crowd, and this super easy recipe makes it so that you can batch make ice cream sandwiches, then easily slice and serve! Tillamook Oregon Strawberry is the star, but the fudge ribbon in this is equally delicious with Vanilla Bean or a classic Chocolate ice cream.

  • In a food processor, pulse together the graham crackers until they are the texture of sand. Pour in the melted Tillamook butter and mix again until the mixture is tacky and starts clumping together.

    • Tip: Make sure to process the graham cracker crumbs and butter to the point where the mixture is very tacky and can be pressed together with your fingers. This will make the layer of the bars easier, plus it will make them easier to slice later on.

  • Line an 8 by 8-inch baking dish with parchment paper. Layer out half of the graham cracker crust in the bottom of the dish. Use a cup to smooth it out and press it in. It should feel and look firm.

  • Melt the coconut butter in the microwave or on the stove top, it should only need 1 minute or so. Add the chocolate and stir into a chocolate fudge texture. Pour this all over the graham crust and smooth it out into an even layer.

  • Scoop the Tillamook Oregon Strawberry ice cream onto the graham crust. Smooth it out.

  • Add the remaining graham cracker crust and pat this down until flat. Cover and freeze for 4 hours or longer to set.

  • When you are ready to serve, remove the ice cream from the baking dish and slice into 9 equal pieces.

  • If you are feeling fancy, drizzle with any remaining coconut butter + chocolate mixture, and top with Himalayan pink salt.
