Gluten Free Skillet Berry Cobbler

End #RealFoodSunday dinner on a sweet note with homemade cobbler. This easy recipe combines ingredients from the pantry with your favorite, fresh berries and Tillamook Butter. Bake the dessert in a cast iron skillet and serve it up with scoops of our deliciously creamy ice cream.

Ingredients
  • Berry Mix
  • 4 cups of fresh berries (we recommend blackberries & raspberries)
  • 1 cup granulated sugar
  • ½ cup of gluten free all-purpose flour
  • 1 tablespoon cornstarch
  • ½ teaspoon salt
Directions
  • Step 1

    Preheat oven to 375°F.

  • Berry Mix
  • Step 1

    Toss the berries, sugar, flour, cornstarch, and salt together in a 10 inch cast iron skillet greased with butter. Level out the mixture so that the berries are even across the skillet. Set aside.

  • Cobbler Topping
  • Step 1

    Add flour, oats, sugar, salt, and cinnamon into a stand mixer (with paddle attachment). Once combined, add butter until the texture of the mix begins to form clumps. The mixture should hold together in clumps when you squeeze it in your hand.

  • Step 2

    Spread topping evenly over the berry mixture with your hands. Press down lightly.

  • Bake the Cobbler
  • Step 1

    Place the skillet in the oven for 40 minutes until the topping is a golden brown and the berry mixture is bubbling.

  • Step 2

    Serve warm with a scoop of Tillamook Vanilla Bean Ice Cream on top, and enjoy!
