Grilled BBQ Chicken Sandwich with White Cheddar

This Grilled BBQ Chicken Sandwich is a taste of summer with its zesty flavors, melted Tillamook White Cheddar Slices and refreshing cilantro vinaigrette.

Ingredients

  • For the Chicken 

    • 3 tbsp olive oil

    • 2 tbsp fresh lime juice

    • ½ tbsp ground cumin

    • ¼ tsp granulated garlic 

    • ½ tsp kosher salt

    • ½ tsp freshly ground black pepper

    • 2 boneless skinless chicken breasts, pounded into ½ inch thick 

  • Toppings 

    • 2 avocados cut into wedges

    • 1 heirloom tomatoes cut into thin slices

    • 1 recipe Cilantro Vinaigrette (below) 

    • 8 Tillamook Medium White Cheddar Slices

    • 4 slices of brioche sandwich bread 

    • Shredded iceberg lettuce (optional but encouraged) 

  • Cilantro Vinaigrette 

    • 1 shallot roughly chopped

    • 2 cups tightly packed fresh cilantro leaves stems removed (about 4 ounces) 

    • 1 clove garlic

    • ½ tsp red pepper flakes

    • ½ cup olive oil

    • 2 tbsp red wine vinegar

    • 1 tsp salt

For the Chicken

  1. Combine the olive oil, lime juice, cumin, garlic, salt and pepper in a bowl and stir to combine. Add the chicken and marinate for 30-45 minutes at room temperature.

  2. Heat a grill to high heat. Lift chicken from marinade (discard marinade) and grill chicken, turning often,
    until no longer pink in center, 7-10 minutes.

  3. The last 2 minutes, add 4 pieces of the Tillamook Medium White Cheddar Slices to the top of each chicken breast and let melt.

  4. Remove from the grill, let rest before slicing in half so 1 chicken breast gets cut into 2 pieces, roughly the same size as the brioche bread. 

  5. Drizzle the brioche on both sides with olive oil or butter and toast for a few moments on the grill to get
    golden. 

Cilantro Vinaigrette

  1. Combine all ingredients in a blender and blend for 1-2 minutes until smooth. 

To assemble

  1. Slather some cilantro vinaigrette on the bottom piece of bread followed by the double decker cheese melted chicken.

  2. Top with a slice of tomato, thinly sliced avocado and a sprinkling of lettuce with salt and pepper.

  3. Enjoy immediately.
