For the chili:

  • 1 lb ground beef 80/20

Making the chili:

  1. Cook the ground beef on medium high until it starts to brown. Add ¼ cup of water to help render the fat. When the ground beef is browned, extract the liquid and add onions and garlic.

  2. Continue to cook the beef, onions and garlic for about 5 minutes or until the onions soften. Add tomato sauce, beef broth, tomato paste and chili powder. Season with salt and pepper. Lower heat to low and simmer for 20 minutes stirring occasionally.

Making the cheese wrapped dogs:

  1. Cook the hot dogs on a medium pan rotating often until the hot dogs are cooked through, about 3-5 minutes. Set the hot dogs aside.

  2. Add half the cheese to the center of a medium high pan. Cook the cheese until the edges become crispy, and the center is bubbling.

  3. Fold in two sides of the cheese blanket. Roll one hot dog with the cheese starting from on side moving down. Place the cheese wrapped dog in the hot dog bun. Repeat with second hot dog.

  4. Add some of the chili on top of the cheese wrapped dog and garnish with both green and white onions. Enjoy!
